Summer 2024: WI to MI

Since we didn’t have like an 8+ hour drive to our camping spot in Michigan (and couldn’t check in until after 3 pm), we had a slow morning at the Hayward, Wisconsin KOA.

The boys ate their breakfast outside and then played a round of mini-golf. While the boys golfed, I made some rice in the Instant Pot to have ready for dinner. While eating vegetarian is typically quite easy and quick… having a starch like rice, potatoes, or pasta ready makes throwing together meals even quicker.

Btw- Amelia always thinks it’s funny when I pull her mattress off her bunk to access that storage area and restock. She landed there after I got into her under-bunk storage to get the Instant Pot out.

Ironically, since we weren’t in a huge hurry we ended up getting “stuck” in our campsite while a lot of campers lined up on the road in front of us to dump their tanks. (Notice the time on the clock, check out of the KOA was 11 am). We waited to get out of our site for quite a while.

We utilized our time we were blocked into our site by prepping lunch for the truck. We made green smoothies and I made some PB&J sandwiches for the boys.

I had had a PB&J for breakfast, so I grabbed the last of a bag of my favorite granola and an individual soy milk and shoved it into a small cooler with an ice pack. It’s always nice to have lunch ready in the truck and not have to stop to grab/make it from the camper.

Yep, cereal and a smoothie for my lunch from the passenger seat. We love using our IronFlask water bottles to keep our smoothies cold.

Our campsite in Fort Wilkens State Park! It was a cozy little campground with a surprising number of pop-up campers and tents sprinkled into the campground.

Obviously Jackson and I had to get out on the kayaks ASAP. We got sprinkled on at the start and end of our paddle, but it was worth it!

I absolutely love kayaking with Jackson. Once we got onto the water he looked at me and asked if we could kayak to the other side of the lake. Yes. 100%.

Once we went straight across and back, we decided to head to the left on the lake. We didn’t know that the Fort was right there. It was fun to discover how close it was to our campsite from the water.

Once we got back from our paddle, it was time to make some rice bowls. We opted to try these Trader Joe’s pre-seasoned chickpeas. They were correct and we will be purchasing them again, especially for camping adventures.

Our bowls had rice, the Trader Joe’s chickpeas, mixed salad greens, cherry tomatoes, shredded carrots, green bell pepper, avocado, and some Trader Joe’s “eggplant garlic spread with sweet red peppers.” We felt very much like this was a bowl from Cava and it was yummy! Jackson had a slight modification of our bowls with some added bacon and cheese. He tried the chickpeas and liked them. Good to know for our next camping adventure.

Our tiny kitchen can get destroyed quite quickly, lol!

Seriously good and simple!

DJ went for a run after dinner and Jackson and I started watching Spy Game on the projector set up in the camper after Amelia was asleep. We will need go finish it later.
